The fruit for this wine was harvested (58% machine, 42% hand pick) from the 12th to the 20th March*, as each block reached ideal ripeness. The fruit was gently pressed but not over clarified, retaining some cloudy lees to aid fermentation. 44% of the wine was fermented using wild yeats in large seasoned oak cuves, and the rest in stainless steel tanks at a cooler temperature. This enabled distinctly different fermentation characters to develop and give unique components for blending. The wine was blended after grading and trials, and then filtered before bottling.
