The fruit for this wine was harvested (58% machine, 42% hand pick) from the 12th to the 20th March 2019, as each block reached ideal ripeness. The fruit was gently pressed but not over clarified, retaining some cloudy lees to aid fermentation. 44% of the wine was fermented using wild yeats in large seasoned oak cuves, and the rest in stainless steel tanks at a cooler temperature. This enabled distinctly different fermentation characters to develop and give unique components for blending. The wine was blended after grading and trials, and then filtered before bottling.
