The grapes were harvested using our Pellenc Selectiv harvesters and crushed to bag presses. The juice was drained and pressed from the skins to minimise excessive phenolic extraction. Once the pressed juice reached its fermentation vessel it was left at room temperature until Wild fermentation began, this naturally occurred after a few days. Fermentation continued for around 30 days. A percentage of the blend was fermented in non-new, French barrels which adds a textural element to the wine with the balance fermented in stainless steel tanks. After fermentation, the various barrel and tank components were tasted and blended to produce this ripe and textural wine.
