Fruit from the Squire Vineyard was gently destemmed and bag-pressed, with the juice cold settled before fermentation. Free-run and clarified hard pressings were fermented cool using selected aromatic yeast strains to retain freshness and lift varietal character. The wine was then held on lees to build texture and complexity.
The resulting wine displays fresh aromatics of Nashi pear, white nectarine, and honeydew melon, layered with aniseed and subtle tropical notes. The palate is rich and warm, with spice-laced highlights and a fresh, weighty finish.
Tasting Notes
Latitude wines are crafted from grapes sourced from the ‘Golden Mile’; a strip of land covered with ancient sunstones and highly regarded for its outstanding grape-growing conditions. The resulting wines are aromatically lifted and riper in spectrum, a result of higher concentration of the stones in the area and the remarkable impact this has on the vines.
