Grapes for this wine were 100% hand harvested at the peak of flavour intensity, and whole bunch pressed direct into French tight grained oak, of which 80% was new and 20% one year old and allowed to ferment naturally. After fermentation, the wine was then gently lees stirred for 5 months during malolactic fermentation and maturation, to enhance palate weight and complexity. The barrels were tasted and the best chosen for blending irrespective of age to achieve the most harmonious representation of the unique vineyard site.
